Chicken Satay Recipe

Chicken satay is a popular street food in Thailand and Malaysia. The chicken is marinated in a mixture of peanut sauce, soy sauce, and lime juice, then skewers are grilled over hot coals. The dish is usually served with sticky rice and a side of pickled vegetables.

Ingredients

  • 1 pound boneless skinless chicken breasts
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1 teaspoon ground cumin
  • 1/2 teaspoon chili powder
  • 1/2 teaspoon dried oregano
  • 1/4 teaspoon salt
  • 1 tablespoon olive oil divided
  • 6 cups cooked white rice
  • 1/2 cup chopped fresh cilantro
  • 8 tablespoons lime juice

Instructions

  • In a small bowl, combine garlic powder, onion powder, cumin, chili powder, oregano and salt. Rub the mixture all over the chicken.
  • Heat 1 tablespoon of oil in a large skillet over medium heat.
  • Add the chicken to the skillet and cook for about 5 minutes per side or until browned.
  • Remove from heat and let cool. In a large bowl, mix together cooked white rice, cilantro and lime juice.
  • Serve with the chicken.Enjoy
