Ingredients

  • 1 whole chicken 3-4 pounds
  • 1 teaspoon olive oil
  • 1/2 cup flour
  • 1/2 cup white wine
  • 3 cloves garlic minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1 tablespoon chopped fresh thyme leaves

Instructions

  • Preheat oven to 425 degrees F (220 degrees C).
  • Rinse the chicken and pat dry with paper towels.
  • Place the chicken breast side down on a cutting board. Using kitchen shears, cut along both sides of the backbone. Remove the backbone and discard it.
