Preheat your oven to 225 degrees Fahrenheit.
Add the pork loin to the skillet and sear for about 5 minutes per side, or until nicely browned.
Pour in the can of chipotle peppers in adobo sauce and chicken stock.Add paprika, garlic powder, onion powder, black pepper, and cumin. Bring everything to a boil before putting it into the preheated oven.
Bake for about 1 hour, or until the pork is cooked through (it should be slightly pink in the middle).
