Ingredients

  • 1 pork loin 3-4 pounds
  • 1 can of chipotle peppers in adobo sauce
  • 1 tablespoon olive oil
  • 1 onion powder
  • 1 tablespoon paprika
  • 1 tablespoon onion powder
  • 1 tablespoon garlic powder
  • 1 tablespoon cumin
  • 1 cup of chicken stock
  • 1 teaspoon dried oregano

Instructions

  • Preheat your oven to 225 degrees Fahrenheit.
  • Add the pork loin to the skillet and sear for about 5 minutes per side, or until nicely browned.
  • Pour in the can of chipotle peppers in adobo sauce and chicken stock.Add paprika, garlic powder, onion powder, black pepper, and cumin. Bring everything to a boil before putting it into the preheated oven.
  • Bake for about 1 hour, or until the pork is cooked through (it should be slightly pink in the middle).
  • Let the pork rest for about 10 minutes before slicing and serving! Enjoy!
