Ingredients

  • 4 chicken thighs
  • 1 tbsp smoked paprika
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1/2 tsp salt
  • 1/4 tsp black pepper
  • 1/2 cup apple cider vinegar
  • 1 tbsp honey
  • 1 small onion diced

Instructions

  • Mix smoked paprika, cumin, chili powder, salt, and black pepper in a large bowl.
  • Rub spice mixture all over the chicken thighs.
  • Whisk together apple cider vinegar, honey, and onion in another bowl or container.
  • Pour mixture over chicken and toss to coat.
  • Cover and refrigerate for at least 2 hours, up to 12 hours.
  • Preheat, the smoker to 375 degrees F.
  • Grill chicken for about 4 minutes per side or until cooked through.
