Ingredients

  • 1 cup of almond flour
  • 1/2 cup of cassava flour
  • 1/4 cup of coconut oil
  • 1 egg
  • 1 teaspoon of baking powder
  • 1 teaspoon of baking soda
  • 1/4 teaspoon of salt
  • 2 teaspoons of cinnamon
  • 2 cups of mashed bananas about 2 large bananas
  • 3 tablespoons of maple syrup or honey
  • 1 tablespoon of vanilla extract

Instructions

  • Preheat the oven to 350 degrees Fahrenheit. Grease a loaf pan with coconut oil and set aside.
  • In a medium bowl, whisk together the almond flour, cassava flour, baking powder, baking soda and salt.
  • Add the cinnamon and the maple syrup or honey and stir until well combined.
  • In another medium bowl, mash the bananas until they are smooth. Stir in the vanilla extract.
  • Add the banana mixture to the dry ingredients and mix until everything is well combined.
  • Pour the batter into the prepared loaf pan and bake for 40 minutes or until a toothpick inserted into the center comes out clean.
  • Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
