Preheat the oven to 350 degrees Fahrenheit. Grease a loaf pan with coconut oil and set aside.
In a medium bowl, whisk together the almond flour, cassava flour, baking powder, baking soda and salt.
Add the cinnamon and the maple syrup or honey and stir until well combined.
In another medium bowl, mash the bananas until they are smooth. Stir in the vanilla extract.
Add the banana mixture to the dry ingredients and mix until everything is well combined.
Pour the batter into the prepared loaf pan and bake for 40 minutes or until a toothpick inserted into the center comes out clean.
Allow the bread to cool in the pan for 10 minutes before transferring it to a wire rack to cool completely.
