Ingredients

  • 2 large sweet potatoes
  • 1 tbsp olive oil
  • ½ tsp smoked paprika
  • ½ tsp chili powder
  • ¼ tsp cumin
  • salt and pepper to taste
  • 2 tbsp chopped fresh cilantro
  • 1 lime quartered

Instructions

  • Preheat oven to 400 degrees F (200 degrees C).
  • Cut sweet potatoes in half lengthwise and place them on a baking sheet lined with parchment paper.
  • Drizzle olive oil over sweet potatoes and sprinkle with smoked paprika, chili powder, cumin, salt, and pepper. Gently toss to coat.
  • Bake in preheated oven for 20 minutes. Remove from oven and sprinkle with fresh cilantro and lime juice before serving.
