Ingredients

  • 1 pound boneless, skinless chicken breasts
  • 1 tablespoon olive oil
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 8 slices sandwich bread
  • 2 tablespoons mayonnaise
  • 2 tablespoons barbecue sauce
  • 8 leaves of romaine lettuce, washed and dried
  • 8 slices smoked pulled pork (optional)

Instructions

  • 2. In a small bowl, combine the olive oil, garlic powder, onion powder, salt, and pepper. Rub the mixture all over the chicken breasts.
  • 3. Grill the chicken for about 8 minutes per side, or until cooked through.
  • 4. Meanwhile, toast the bread on each side.
  • 5. Slather each piece of toast with mayonnaise and barbecue sauce. Add a few pieces of grilled chicken on top and top with a leaf of romaine lettuce and some smoked pulled pork, if desired. Serve immediately.
